Strawberry Banana Muffins

 It was unofficially Strawberry Week in my kitchen this week. Our local store had a good sale going and I ended up with 4 pounds of fresh beautiful strawberries. Then I just had to figure out what to do with them all! Strawberry lemonade, strawberry applesauce, and these delicious muffins were the result.

I really need to learn how to can things though. There are currently 8 little jelly jars full of applesauce in my fridge. Also may want to invest in larger jars…

  1. 2 eggs
  2. 3/4 cup sugar
  3. 3/4 cup strawberries, diced
  4. 1/2 cup mashed banana
  5. 1 tsp vanilla extract
  6. 1/4 cup oil
  7. 1/4 cup applesauce
  8. 1 1/2 cups flour
  9. 1/2 tsp baking soda
  10. 3/4 tsp cinnamon
  11. 1/4 tsp salt
  1. Preheat oven to 350 degrees F.
  2. Lightly beat eggs in a mixing bowl.
  3. Add sugar, strawberries, mashed banana, vanilla, oil, and applesauce. Mix well.
  4. In a separate bowl, whisk together flour, baking soda, cinnamon, and salt. Add to wet ingredients. Mix thoroughly.
  5. Spray muffin cups with nonstick spray.**
  6. Divide batter equally between muffin cups.
  7. Bake for 15-20 minutes. Toothpick inserted will come out clean when done.
  1. *The recipe makes 12 normal size muffins. I made them a little smaller and stretched it to 15 to make them a little lower calorie per muffin.
  2. **I use paper liners, and spray the inside of them.
